A summer meal isn't complete without a tall glass of Lipton Iced Tea! But how about drinking and eating Lipton Iced Tea at your next cookout? Make my easy Lipton Iced Tea with Blueberry-Watermelon Ice Cubes and Tea-Brined Lemon Chicken Kebabs to take your party menu to the next level.
When I plan a party menu, I always have one unusual recipe that will have guests talking long after the festivities have ended. The key is to excite the palate by combining flavors that aren't typically used together.
For the lemon chicken kabobs I substituted Lipton Iced Tea for water in the chicken brine. The result was amazing! I You'll savor the subtle tea notes and bright lemon flavor on a sweltering summer day.

Steep Lipton tea

Add fresh sliced lemon, rosemary springs, 1/4 cup kosher salt and 1/2 cup brown sugar

Pour over chicken and marinate several hours

Grill until cooked through. For an optional and flavorful garnish, combine 1 cup fresh tea, a tablespoon of honey and a tablespoon of chopped parsley and brush onto piping hot chicken

What's a great dish without a refreshing drink to wash it down? Your guests will go ga-ga over my Lipton Iced Tea infused with Blueberry-Watermelon Ice Cubes recipe. Simply freeze fresh blueberries and pureed watermelon in an ice cube tray. Surprise; there is no water in these "ice" cubes, just fruity goodness! Stir them into freshly made Lipton Iced Tea to keep drinks chilly without watering them down.
Consider creating an iced tea "mix-in party" by serving a variety of fruit-infused ice cubes and allowing guests to pick their favorite flavor combination. A few frozen fruit cube ideas: cherry-lime, mango-strawberry and cucumber with lemon and basil.

Whip them up in your food processor or blender and freeze until ready to use. You're only limited by your imagination.

Next, to round out the menu, I used the leftover chunks of watermelon from my blueberry-watermelon ice cubes to make a refreshing salad. Simply mix watermelon, sliced seeded cucumber, raspberries and blackberries with a dash of lime juice and honey. With that, it's time to get the party started!
The best way to prep for a get-together is to get as much work done in advance as possible. Wash veggies and fruit, marinate the chicken and make fruit ice cubes the night before to make life and the party as much fun for you as your guests.

Tea-Brined Lemon Chicken Kebabs
Ingredients
2 pounds boneless, skinless chicken breast (cut into tenders)
2 quarts Lipton Iced Tea (reserve 1 cup)
1 large lemon (sliced)
2 sprigs rosemary
1/4 cup Kosher salt
1/2 cup brown sugar
1 tablespoon honey
1 tablespoon chopped parsley
Canola oil
Directions
Steep 2 quarts Lipton Iced Tea bags in a saucepan or pitcher
Set aside 1 cup for later use
Stir in Kosher salt and brown sugar until completely dissolved
Add lemon and rosemary sprigs
Place chicken in resealable container
Pour tea mixture over chicken
Cover and refrigerate overnight to ensure the chicken stays moist on the grill
Place chicken onto kebab skewers (soak wooden skewers in water prior to use)
Brush with canola oil
Grill until cooked through
Prepare glaze: Combine reserved cup of tea, honey and parsley
Brush or spoon glaze over hot chicken
Lipton Iced Tea Infused with Blueberry-Watermelon Ice Cubes
Ingredients
2 quarts Lipton Iced Tea
1 personal-size seedless watermelon
1 pint blueberries
Directions
Prepare 2 quarts Lipton Iced Tea
Place fresh blueberries in ice cube tray
Pour pureed watermelon over blueberries
Freeze 4-6 hours
