Pizza Turnovers

The perfect after school snack for the kiddos or quick lunch to reheat at the office.

Homemade turnovers have the appeal as the freezer section variety without the added unhealthy junk.

The ingredients are easy to find and safe for kids to use on their own.

Pizza Roll Directions:

2 frozen puff pastry sheets (1 package) 1 ½ cups pizza sauce Sliced pepperoni (about 32 pieces) 2 cups shredded cheese (mozzarella or Italian blend) 1 egg and tablespoon of water (whipped with a fork for egg wash) Preheat oven to 400 degrees Allow puff pastry to thaw 35 minutes on countertop Unroll puffy pastry on lightly floured surface Lightly flour top of puff pastry and gently rub in Using a pizza cutter or sharp knife, cut puff pastry in four equal sections Moving quickly to prevent dough from warming up, lightly stretch each section Place tablespoon of sauce in the middle of each square Using the back of the tablespoon, make a well in the sauce Fill the well with a heaping tablespoon of shredded cheese Place a row of four or five slices of pepperoni, corner to corner, over the sauce and cheese Fold in one corner of dough Using the back of your finger or a pastry brush, brush egg wash over folded flap Pull the other side over, stretching slightly, to cover pastry (like sealing an envelope) Bake four pockets at a time, at least two inches apart, at 400 degrees for 15-20 minutes Keep remaining uncooked pizza pockets in the refrigerator until ready to bake

*The best after school (work) snacks are quick and easy – Make pizza pockets ahead and refrigerate up to three days. Simply pop as many as you need in the microwave or toaster oven, heat to desired temperature and enjoy.
