Hot Cauliflower and Gruyere Cheese Dip
Recipe by Andrea for Vermilion Lane
Ingredients:
1 head cauliflower
1 cup grated gruyere cheese
1 cup grated white cheddar cheese
8 ounce cream cheese, room temperature
4 tablespoons of butter (set aside 1 tablepoon)
salt and pepper to taste
1/4 cup panko bread crumbs
1 clove garlic, minced
Directions:
Shred cauliflower into rice-sized pieces with a box cheese grater (reserve one large floret)
Saute cauliflower in 3 tablspoons of butter over medium high heat, stirring frequently for about 10 minutes, then cover for 5-7 minutes to steam until coked through.
Combine cheeses and garlic in a large mixing bowl.
Stir in sauteed cauliflower.
Pour mixture into a baking dish.
Bake in a preheated 350 degree oven about 20-30 minutes.
While the dip is baking take reserved cauliflower floret and slice it into 3-4 pieces. Saute in reserved 1 tablespoon of butter over medium high heat until golden brown.
Place the carmelized floret on top of the fully baked dip for garnish.
Serve with crackers, bread, or raw veggies.
