Brown Sugar Chicken Salad Wraps

Brown Sugar makes it better but lettuce erases any guilt.

Chicken salad wraps are a great alternative to sandwiches. And once you've whipped up the ingredients, they're just as easy to make. I like to put mine together sunday night, then the whole family's lunch is ready to roll for the beginning of the school/work week.

Rotisserie chicken makes preparation a breeze. Be sure to use white and dark meat for the best flavor and texture.

Shredded chicken

Kick it up a notch with one of these delicious mix ins:

  • 1/4 cup chopped walnuts

  • 1/4 cup dried cranberries

  • 1/4 cup red grapes (halved)

  • 1/4 pecans

  • 1 tablespoon poppy seeds

To really spice things up, give your chicken salad a twist with international spices and seasonings.

Asian Inspired Chicken Salad

Substitute 1 tablespoon soy sauce for salt, add 1/2 tablespoon fresh ginger, 1 tablespoon sesame oil, 2 teaspoons rice vinegar and 1/2 cup diced daikon and a teaspoon of sesame seeds.

Mix well with original ingredients. Serve in iceberg lettuce cups and sprinkle with fried wonton strips.

South of the Border Chicken Salad

Add 1/4 cup finely chopped cilantro, 1 finely diced jalapeno pepper, juice of 1/2 lime, 2 tablespoons honey, 1 teaspoon cumin, and 1 teaspoon paprika to original ingredients.

Mix well. Wrap in soft tortillas with lettuce and tomatoes. Or serve over a bed of crispy tortilla chips and chopped lettuce. Top with salsa.

Brown Sugar Chicken Salad

Ingredients:

1 whole rotisserie chicken (shredded with skin and bones removed)

1 cup mayonnaise

1/4 cup brown sugar

3/4 cup chopped celery

1/8 cup chopped green onions

juice of one lemon

1 tablespoon fresh tarrogon (finely chopped)

1/8 cup finely chopped parsely

1/4 teaspoon freshly cracked pepper

1/4 teaspoon kosher salt

1 head of boston lettuce or green leaf lettuce for serving (leaves removed, washed and dried)

1 dozen grape tomatoes halved for garnish

Directions:

Place shredded chicken in large mixing bowl and set aside.

In a medium mixing bowl combine all ingredients except chicken.

Pour dressing over shredded chicken and fold together.

Using an ice cream scoop or large spoon, place one scoop of chicken salad into each lettuce cup.

Sprinkle tomatoes on top and serve cold.
